Cutting Board Safety

This is a trick I learned from the pros during my one foray into restaurant cooking while in grad school. To keep cutting boards from wiggling around (and risk a slip with the knife), dampen a dish towel, lay it on your work surface, and set your cutting board on top. Alternatively, you can cut pieces of foam or rubber (the kind used to line shelving available in hardware stores) to match the size of the cutting boards and store them along with your boards. This will stabilize the cutting board so that you don’t risk slips as you work your magic with the knife. It’s particularly useful once your kids hit the stage when they are learning to wield a knife and you want to keep their precious little hands safe and sound.

My favorite quick dinner idea is for Red and Green Salad. John would live on salad, and this is the quickest way to get one to him. It has three ingredients and takes less than 5 minutes to prepare:

1 ripe tomato, cut in bite-sized pieces
1 ripe avocado, cut in bite-sized pieces
The dressing of your choice.

I put it into a soup plate with a fork and we just eat from the serving dish. My favorite dressing is La Martinique Bleu Cheese Vinaigrette. It’s made in New Orleans, and can be bought online. It’s really, really good.

I found your blog through the Afghan Cooking blog and want to tell you how much I have enjoyed exploring both of them.

My kids are now in college but live a home and commute so I still need items on hand for quick meals since they are often rushing out the door.” Mom” McMuffins are not only fast to make but also very portable and can be eaten with one hand if need be.

I always have plenty of fresh eggs, whole wheat English Muffins, uncured Canadian bacon and cheese. These work for breakfast, lunch or dinner!

I will be in your city later this week and was wondering if you can recommend any Indian or Afghan restaurants I could try. I will be staying near Union Sq but would be happy to walk a mile or two for good food!

Thanks for sharing your “Mom McMuffins” idea ….I like that. I recommend Helmand Palace. It’s an Afghan restaurant on VanNess Avenue…not too far from Union Square. A good walk, quick taxi, or easy busy ride away. I’m not as well versed on Indian but have enjoyed meals at Dosa, which has two locations. Enjoy your visit!
