Started the week off with a toast party in honor of the dad in the house. Mr. Mom’s Kitchen was gifted a shiny new toaster for Father’s Day, so we felt obliged to break it in. Not exactly a new surfboard, but it does make some killer toast.
Breakfast for a crowd the following morning involved Marion Cunningham’s Whole Wheat Waffles accompanied by gently stewed blackberries and Greek yogurt. The leftovers went into the freezer for, what else? Toaster waffles.
My Aunt Nina unearthed this ruffled, floor-length apron in her attic and mailed it cross country. Sewn by my mom circa 1975, I do believe she sewed Easter dresses for my sister and me using the same pattern, only the fabric was upholstery-weight and bright green. Gotta love the 70s.
Giving my long-time lunch salad staple (carrots/fennel/arugula/Parmesan) a seasonal upgrade. This Summer Panzanella number nourished me (and the kids) all week: mixed greens, cherry tomatoes, avocado, cucumber, and baguette roughly torn and toasted. Oil, vinegar, salt, pepper. Done.
After deciding she wanted to make dinner one night, I was surprised when Rosie settled on Beet and Brown Rice Sliders from the Dinnertime Survival Guide. There was sibling suspicion at the table when the burgers arrived, but not a crumb remained from the serving plate. Success!
More kid cooking here: a mini cheese course instead of dessert one night. Crackers, berries, and an egg cup of honey accompanied the cheese.
Fired up the grill for Yummy Supper’s killer Turmeric Chicken one balmy evening. I doubled the lemongrass/garlic/turmeric/cilantro marinade and slathered it on a whole chicken instead of a mess of wings. Tippy tops.
