I’ve been snapping loads of pictures of what I’m up to in the kitchen with my iphone lately. Thought I’d send you into Saturday with a few images from this past week.
I had a Martha Stewart moment one day making after school snack: A whole banana rolled into a peanut butter-smeared slice of whole grain bread.

The tomatoes are insane right now. No chance we’re getting scurvy over here. This week’s favorites were a luscious ratatouille, an open faced tomato sandwich for breakfast, and simple tomato salads. These beauties came from my friend Leigh’s garden. Lucky me.

My current between meal snack obsession: Walnut-stuffed medjool dates. I got so excited I posted this shot on my Facebook page. My kids said I was weird.

Got a wild hair to make these Rise and Shine Muffins last weekend from The Newlywed Cookbook. Super nourishing with zucchini, carrots, whole grain flour, and nuts. The top has a perfect crunch.

I’ve made three batches of this kale salad in the past week. I think that much kale warrants a treat, which is where cake comes in.

This is a tried and true Almond Butter Cake (emphasis on butter) from Marion Cunningham made for a friend’s birthday party this week. Not so healthy, but so easy you can make it with your eyes closed. And it’s delicious. Plus, don’t forget about all that kale.

    I’ve made two batches of the kale salad this week and feel it somehow balanced out the fact that I ate the leftover almond butter cake!

    funny!!! i made the kale salad & about 24 hrs later thought – i’ll make the nigel slater lemon glazed pistachio lemon cake. coincidence?
    also- that’s not all that much butter in your almond cake. INMO. :-)

    This reminds me of a “peanut butter and banana wrap” I made years ago. I wanted a banana and peanut butter sandwich (one of my all time favorite things to eat) but we were out of bread. So, I made it on a whole wheat tortilla and threw the banana on whole because I figured the tortilla wouldn’t hold the slices like bread does. I still make these wraps every now and then.

      I think tortilla in place of the bread is brilliant. Probably rolls a whole lot easier, too.

    Experimenting with green smoothies for breakfast… not going so well. But gorgeous pear tarts with fresh cream more than made up for it… must be the full moon (coming for dessert).
