Waffle Iron Egg Sandwich

Waffle Iron Egg Sandwich for Valentine's Day / momskitchenhandbook.com I warned you last week…about my feelings when it comes to Valentine’s Day, my affinity for the iconic heart, for the sentiment of an entire holiday built on love.  I decided one heart-shaped recipe simply wasn’t enough. And so here’s another: An egg sandwich, made in a waffle iron, cut “just so”. It’s exactly the sort of breakfast to make for your loved ones (and yourself) on Friday. Valentine’s Day.

Waffle Iron Egg Sandwich /momskitchenhandbook.comPrepped and assembled into a simple sandwich. You could sneak a paper thin slice of ham or prosciutto in there, too, if you’re so inclined.

Get it into waffle iron, smash it down with the lid, and let it go crispy. Resist the temptation to eat it right then and there.

Do a little knife work. Perfection is overrated here.

SONY DSCKeep those scraps all to yourself (they’re the best part). Tell no one.

Enjoy the fruits of your labor….and be sure to share.

Wait for the love to come right back at you.

Hang onto it. It will feed you too.

Waffle Iron Egg Sandwich

Ingredients

  • 1 egg
  • Salt
  • Pepper
  • 1 whole grain English muffin
  • 2 paper thin slices favorite firm cheese (I used sharp Cheddar)
  • 5 or 6 baby spinach leaves
  • non-stick cooking spray

Instructions

  1. Turn on the waffle iron.
  2. While the waffle iron heats up, softly scramble the egg until just cooked; season with salt and pepper.
  3. Split open the English muffin and lay one slice of cheese on the bottom half. It should cover the surface of the muffin. Top with the egg, spreading it evenly over the muffin. Top with the spinach followed by the remaining slice of cheese. Cover with the remaining muffin half.
  4. Open the waffle iron and coat it with a little non-stick cooking spray. Put the sandwich right in the center. Close the lid and latch it if possible. If not, hold it down firmly with your hand. When the muffin is crispy and brown, transfer to a cutting board.
  5. Use a knife to trim the sandwich into the shape of a heart.
  6. Serve immediately.

I know. I’m ready to put anything in a waffle iron. Steak anyone?

I love this. Thanks for sharing! What kind of whole grain English muffins do you use?

My favorite is probably Rudi’s whole grain followed by Orowheat whole wheat.

Thanks for this tip Katie. I made these for my 5-year-old and my husband this morning and they were a big hit. 3-year-old took a pass once he saw the waffle maker and only wanted a waffle. I will be getting more use out of my waffle maker from now on with these and your other grilled sandwich ideas. Love your blog and cookbook. Thanks again and happy Valentine’s Day!

Yummmmm! I know Valentine’s Day is over, but this looks like a delicious way to start the day no matter how you slice it (pun fully intended).

Hi Elsa,

Mine is Chef’s Choice. I’ve had it for several years and it does the job. It looks similar to this one: https://www.amazon.com/ChefsChoice-WafflePro-Traditional-Temperature-6-Setting/dp/B000A3PBWO/ref=sr_1_5?ie=UTF8&qid=1534875815&sr=8-5&keywords=chef%27s+choice+waffle+maker I’m sure you can find it on sale if you look around. 🙂 Katie
