Cucumber Apple Mint Smoothie

Cucumber Apple Mint Smoothie/ MOMS KITCHEN HANDBOOK

Smoothies are standard fare around here all year round, but they never taste so good as in summer. So I thought I’d do a series of posts featuring four favorites. They’re recipes I developed for Cooking Light Magazine that run the gamut from mega-nourishing to sweet treats. All will fill the bill for cooling you off on a hot summer day.

This first smoothie is ideal right about now since it features cucumber, a summer garden staple that is especially cooling. This recipe is a gentle introduction to “green smoothies” if your kids are accustomed to fruity ones.

Thanks Erin. I’m still in vacation mode, but reality hits soon. Can’t wait to get home and get a peek at your book.
