Mother’s Day Supper Menu

I know I’ve told you about my friend Pam before. Her kids are off to college now, but when they were little, she spent every Mother’s Day by herself. On purpose.

Instead of being showered with homemade cards penned in preschool or being on the receiving end of French toast served on a tray, she would high tail it to the nearest luxury hotel, book herself a room, and spend a quite day and night all to herself.

I always thought that was sort of brilliant.

Most of us, though, don’t have either the desire or gumption to go it alone on Mother’s Day. And so, I’ve put together a simple, elegant Mother’s Day menu that may just come in handy. Cook it for your mom, or for yourself, or think about passing it onto a spouse or kids so they can cook it for you.
