Lentil Turkey Tacos

The kids asked for “old school” tacos this week, but since I had a boatload of leftover lentils, I gave them (the tacos, not the kids) a “new school” spin. Did up turkey taco meat using an equal volume of lentils. No complaints. Lentil indoctrination seems to be working.

Veggie Banh Mi

Another twist on the traditional was this roasted cauliflower banh mi I ordered at B. on the Go.  My prediction that cauliflower is the new kale is playing out nicely.

Vegan Burgers

One non-traditional recipe that didn’t work so well were these veggie burgers (with secret sauce) pulled from the pages of a magazine. Total fail, except where our dog is concerned, since she thought they were fabulous.

Spinach pie

One recipe that never lets me down is this spinach pie, which I made this time using all manner of leafy greens that were piling up in the fridge: chard, kale, spinach, and arugula.

Pies

Speaking of pie, my friend Beverly threw a Pi Party this week. I’m not particularly fond of math and am not sure it’s worth honoring, BUT, I do support any holiday that celebrates pastry.

french onion soup

Also worth celebrating is playing hooky with your husband, which is exactly what happened this week when Mr. Mom’s Kitchen and I high-tailed it for a day of skiing. The slopes were lovely, the sky was blue, but a glass of wine and this French onion soup were quite possibly the highlight of my day. 
Asparagus and burrata

Apparently all that Gruyere wasn’t enough for the week. I bought the season’s first asparagus, roasted it in the oven, and piled it over a whole mess of burrata. That and some grilled bread were a hit at the dinner table. 

Savory Oatmeal

Popular at the breakfast table this week was a pot of steel cut oats done savory instead of sweet…olive oil, Parmesan, and sauteed kale.

I’m not much of a beer drinker, but I couldn’t help but fall a little bit in love with the tiny glasses of beer at a new brewery in town. His and hers. 

A Simple Easter Supper

As for meals, this was the highlight this week: I did up an entire early Easter dinner so I could put together a menu for all of you. If you missed it, head on over here.
