THAI SALMON CURRY WITH VEGETABLES
This may sound sort of exotic, but it’s pretty easy to do and not too spicy for younger palates. Serve with steamed rice and dinner is done. Want dessert? Make a plate of fresh fruit, such as pineapple, kiwi, and mango. Head here for a tutorial on cutting a pineapple.
WILD BLUEBERRY BALSAMIC SHEET PAN CHICKEN DINNER
This simple supper involves piling chicken, frozen wild blueberries, sweet potatoes, and red onions onto a sheet pan, slathering on mustard and balsamic vinegar, and roasting until tender. Clean up is easy.
CRISPY AVOCADO TACOS
Serve with a side of beans (such as the slow cooker pinto ones below) along with cut up cucumber, jicama, and other raw vegetables doused with lime and chili or Tajin. Alternatively, this Mexican Slaw is delicious with tacos. Got avocado-shy kids? Just make the kid’s tacos with tortillas and cheese and serve the avocado on the side. Who knows….they may just try it one of these days.
DARK CHOCOLATE SUPER FOOD BARK
I swiped this idea from my mom for a chocolate fix that is a nourishing treat. It’s a blend of dark chocolate, cashew butter, dried fruit, and seeds that you stir together and snap into bite-size pieces. Tuck them into lunch boxes or enjoy with your afternoon tea. Be sure to store in the fridge!
PERFECT SOFT-COOKED EGGS WITH BUTTERED TOAST “SOLDIERS”
A perfect, simple breakfast in my book (and this is a reliable method for getting that tender yolk). My kids have always loved dipping toast strips right down into the center.
SHOPPING LIST // WEEK 4
Thai Salmon Curry with Vegetables
2 teaspoons extra-virgin olive oil
1 medium yellow onion
1 pound fresh salmon fillets
One 13.5-ounce can light coconut milk
2 tablespoons red curry paste
1 tablespoon brown sugar
1 tablespoon Asian fish sauce
1 large sweet potato (8 ounces)
1 medium zucchini
Large handful baby spinach
Wild Blueberry Balsamic Sheet Pan Chicken
1 pound sweet potatoes
1 medium red onion
1 tablespoon extra-virgin olive oil
2 tablespoons balsamic vinegar
1 heaping cup frozen wild blueberries
3 tablespoons whole-grain Dijon mustard
1 tablespoon honey
One 3 1/2 to 4 pound chicken
Crispy Avocado Tacos
2 teaspoons extra-virgin olive oil
4 ounces sharp Cheddar cheese
8 corn tortillas
Favorite salsa, taco sauce, or sriracha
2 ripe avocados
8 crunchy, light-green leaves of Romaine
Lime wedges

6 ounces bittersweet chocolate
1/3 cup cashew butter (or other favorite nut or seed butter)
1/3 cup roasted cashews or other favorite nuts
1/3 cup raisins, dried cherries, or dried cranberries
3 tablespoons roasted, salted pepitas (shelled pumpkin seeds)
1 heaping tablespoon hemp seeds
Flaky salt, such as Maldon (optional)
Perfect Soft-Cooked Eggs with Buttered Toast “Soldiers”
