We’re bringing summer vibes into this week’s game plan, with pizza on the grill (no judgement if you throw it in the oven instead) and a main dish with shrimp and fresh corn. You’ll also find a favorite blueberry breakfast smoothie with a secret ingredient.
VEGETARIAN NO-NOODLE ZUCCHINI LASAGNA
This was a big hit last summer and I’m looking forward to making it again as the weather heats up. Don’t be put off if you aren’t a fan of tofu, because it blends in with all the cheesy goodness and sort of goes under the radar. It’s a great one-dish meal, maybe with a crusty baguette on the side. Add a simple salad if you like.
PAPRIKA-SPICED SHRIMP AND CORN SALAD
Another one-pan favorite that you can make in a flash. It takes advantage of the corn that’s starting to show up in markets, but feel free to use frozen corn if you can’t find fresh. Serve straight up or add little corn tortilla quesadillas and avocado on the side.
MIDDLE EASTERN LAMB PIZZA
A blog newcomer that relies on store-bought naan bread instead of pizza dough. I like to serve this with a refreshing chopped salad of Romaine, cucumbers, bell peppers, and cherry tomatoes doused with oil and vinegar.
HEALTHY RANCH DIP AND DRESSING
My kids would eat cardboard if I served it with this homemade ranch. It’s a good one to pack into school and camp lunches or set out with a slew of vegetables before dinner.
BLUEBERRY SUPERFOOD SMOOTHIE
I love this smoothie so much, I put a version of it in Rise & Shine. The secret ingredient here is avocado, which lends creaminess, fiber, and healthy fats without tasting like you’re eating a green vegetable.

4 large zucchini
1 tablespoon extra-virgin olive oil
16 ounces extra firm tofu
1 tablespoon balsamic vinegar
12 ounces fresh Mozzarella cheese
3 cups homemade or store-bought marinara sauce (buy Rao’s if you can find it)
⅓ cup finely grated Parmesan cheese
Paprika-Spiced Shrimp and Corn Salad
1 1/2 tablepoons extra-virgin olive oil
1/2 medium red onion
4 ears fresh corn
2/3 cup cherry tomatoes
1 large handful fresh arugula
1 pound uncooked medium shrimp
Cayenne pepper
Smoked paprika
1/2 lemon
Spicy Lamb Pizza on Naan with Mint and Pickled Onions
½ cup vinegar, red or white wine, or apple cider
2 teaspoons sugar
1 large red onion
2 teaspoons extra-virgin olive oil, plus more for brushing the naan
2 large cloves minced garlic
½ pound ground lamb
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
½ teaspoon red pepper flakes (more if you like it extra spicy)
One 14.5-ounce can diced tomatoes
4 whole-wheat tandoori naan
4 ounces fresh Mozzarella
¼ cup roughly chopped fresh mint
Healthy Ranch Dip and Dressing
½ cup non- or lowfat plain Greek yogurt
1/3 cup light sour cream
2 tablespoons mayonnaise

Blueberry Superfood Smoothie
1 cup plain kefir or plain yogurt
¾ cup coconut water, plus more if needed
1 frozen banana
1 cup fresh or frozen blueberries
1 small ripe avocado
½ teaspoon vanilla extract
1 tablespoon plus 1 teaspoon pure maple syrup
8 ice cubes
1 to 3 teaspoons hemp or chia seeds (optional)
