GRILLED CHICKEN KEBAB WRAPS

A good one to have on your Memorial Day menu, these flavorful kebabs are pretty easy to pull together and light on the appetite. The chicken gets threaded onto skewers and can be done under a broiler instead of a barbecue, if need be. The Middle Eastern flavors are a good match for Quinoa Tabbouleh. 

SAVORY SPINACH AND FETA PIE

A lighter spin on a Greek-style spanikopita, this is an excellent make-ahead dish that doubles as a leftover for lunch. Don’t worry, filo dough is pretty easy to work with and seeing that golden puff come out of the oven is darn satisfying. As for sides? Maybe start with a cup of soup, like this tomato one or your favorite store-bought boxed soup (p.s. did you know that the vitamin C in tomato soup will boost the absorption of the iron in spinach?)

INSTANT POT BEEF AND BUTTERNUT SQUASH CHILI

The Instant Pot makes quick work of a dish that is traditionally cooked low and slow. The results won’t disappoint. The beef and butternut squash make a winning pair and using taco seasoning mix just means fewer ingredients to worry about. 

WILD BLUEBERRY COCONUT YOGURT POPS

This has become a fast favorite on the blog that is a good one to have on hand for a frozen treat fix that happens to be full of antioxidants. It’s just four ingredients and makes eight tasty pops that come in at under 100 calories each.

WHOLE-GRAIN BLENDER KEFIR PANCAKES

These pancakes are full of the good ingredients and a snap to make in the blender. Top them with any fruit, nuts and/or seeds and pair with favorite breakfast sides, from chicken apple sausage to yogurt parfaits.
