I figured this might be a good one for a Labor Day barbecue. Make the salsa verde ahead of time and then toss the steak on the grill. The cut is thin, so the cooking goes quickly. On the side? Steamed or grilled corn and a big tomato salad would be simple and delicious. Leftovers make great school or work sandwiches.

GREEK PIZZA WITH POURABLE CRUST

This is a good weeknight pizza, since its a crust you stir together like batter, with no need to knead or rise. Make a double batch and freeze the extras for school lunches.


QUICK, CREAMY TOMATO SOUP (WITHOUT A DROP OF CREAM)

A simple soup that gets its creaminess from heart-healthy olive oil instead of heavy cream. It takes minutes to make and is comforting for a simple back-to-school supper. Half or whole sandwiches of virtually any variety make a good pairing for this soup.


BLUEBERRY PECAN BAKED OATMEAL CUPS

Made with rolled oats, ginger, pecans, and blueberries, these make a nutrient-packed breakfast that is portable, tasty, and can be made ahead of time. Store in the fridge (or freezer) and pull them out for quick breakfasts all week long. 

LUNCH BOX BAGEL KABOBS 4 WAYS

Switch up your lunch box sandwich routine by making these bagel kabobs instead. You can do any combination that suits you, but several ideas are included in the recipe (and on the shopping list below).
