Just popping in with a menu for the coming week. I included a few favorites for rebooting healthy habits, since I know that’s something I could use right about now. Enjoy!

CHICKEN THIGHS WITH MAPLE CIDER VINEGAR GLAZE

If you’ve never had vinegar chicken, give it a whirl. This one has a refreshing salad on the side that pairs well with the tangy glaze.

RESET BUTTON SALAD WITH CARROT MISO GINGER VINAIGRETTE

I consider this the ultimate “reset” salad, perfect for when you’re looking for a break from heavy meals. It’s packed with colorful vegetables and served with a tangy, delicious miso dressing. If you’re serving it for a main dish, consider adding cooked chicken or baked tofu for added protein and heft.

GRILLED SKIRT STEAK WITH SALSA VERDE

This is one of the best ways I know to prepare steak: a thin cut that cooks quickly with a tangy, salty, herby sauce to spoon over the top. Grill or roast some little potatoes or other vegetables and toss together a salad with this vinaigrette

SLOW COOKER PINTO BEANS

Do up a pot of these pinto beans to use as the foundation for taco night or a rice and beans dinner. Add sliced avocado, your favorite salsa, corn or flour tortillas, and since it’s still in season, corn on the cob doused with chili and lime.

PROSCIUTTO ARUGULA LAVASH PIZZA

Dinner doesn’t get any easier that this pizza, built on whole-wheat lavash (which works deliciously as a quick crust). A big salad on the side is standard in our house, made with cherry tomatoes and sliced cucumbers this time of year.

SUPER GREEN SMOOTHIE

This smoothie is another tasty way to reboot your routine. It’s packed with nutrient-rich fruits and veggies and so tasty, it goes down easy.

EASY EGG-IN-A-BAGEL BREAKFAST

Egg in a Bagel Hole

A tasty twist on the classic egg-in-a-hole (also known as toad in a hold, one-eyed-jack, and winkie). This time the base is a thin slice of bagel rather than a standard slice of toast. Add a pile of spinach and a little cheese to the top for a boost of nutrition and flavor.
