The holidays may be upon us…with all the parties and fanfare..,but everyday dinner still needs doing. Here’s what’s up for Weeknight Rescue. Find the printable shopping list at the bottom of the page.

SAVORY PEAR AND GRUYERE TART

Pear and Gruyere Tart

Roll out store-bought puff pastry, top with caramelized onions, Gruyere, and pears, and bake into a flaky tart. It’s on the lighter side for supper and is perfect when paired with a simple arugula or mixed green salad. If you have a holiday cocktail party on the horizon, this tart makes a terrific appetizer cut into little squares.

SLOW COOKER TURKEY & SQUASH CHILI Slow Cooker Butternut Squash Chili

A good one to make ahead and have on hand. Also excellent if you have company around. Set up a chili bar with all of your favorite fixings: sour cream, shredded cheese, chopped cilantro, salsa, and sliced green onions.

BROWN SUGAR BABY BOK CHOY WITH PORK & TOFU

Baby bok choy with pork and tofu

A longtime blog favorite, this is savory, sweet, and a little bit spicy. It might make a convert of folks who haven’t yet taken to tofu. Serve over cooked brown rice and it’s a complete meal.

CHOCOLATE COCONUT COPYCAT BARSChocolate Coconut Larabars

A no-bake energy bar that is a knockoff of a Larabar (hence the name “copycat”). Make a batch and stow them in the fridge, where they will keep for a good while.

BLUEBERRY SUPERFOOD SMOOTHIEblueberry superfood smoothie

With all the eating and merrymaking of the holidays, I like to get the day started on the right foot. This is a creamy, delicious smoothie full of good-for-you ingredients: blueberries, avocado, kefir, and coconut water, among several other superfoods.
