Weeknight Rescue // August 2019 // Week 32

It’s a funny time of year, since most of us are still steeped in summer, while others have already sent kids back to school. Regardless, family dinner goes on! Here’s a meal plan to get you through, whatever kind of week you have.

KALE AND CRISPY CHICK PEA CAESAR SALAD

This scrumptious kale caesar is a good jumping off point for dinner. Adding a couple of grilled and sliced chicken breasts or maybe a bowl of tomato soup on the side is all it takes to make it a meal.

SPAGHETTI WITH TOMATO BASIL SAUCE

If you’ve ever eaten the famous pasta with tomato sauce at Scarpetta in New York , this is your chance to try it at home. It’s a little more demanding that this summery pasta, but worth doing if you have the time.

PORK CHOPS WITH PEACH AND PECAN SALSA

The peaches are starting to get really good, which is why I put this on the menu this week. You can assemble the salsa in the time it takes to grill (or broil) the chops. Pair them with your favorite summer vegetables and dinner is done.

CHICKEN SALAD IN LETTUCE WRAPS

This light and bright chicken salad relies mostly on Greek yogurt for its creaminess, which makes it a whole lot healthier than most. It works for lunch or dinner, either spooned into lettuce cups or between slices of whole grain bread.

ICE CREAM WITH HOMEMADE HOT FUDGE

Summer is the season for ice cream and nothing is better in my mind than topping it with a good hot fudge sauce. And this one is SO good. Treat yourself! (TIP: if you have any leftover hot fudge sauce, spear peaches, strawberries, or banana onto skewers and do a dunk).

Kale and Crispy Chick Pea Caesar Salad
One 15-ounce can no-salt-added chickpeas
1/4 cup plus 2 tablespoons extra-virgin olive oil
2 tablespoons mayonnaise
1/4 cup plus 2 tablespoons freshly grated Parmesan cheese
1/2 anchovy fillet or 1 teaspoon anchovy paste
2 garlic cloves
Zest and juice of 1/2 medium lemon
2 teaspoons Worcestershire sauce
1 teaspoon granulated sugar
1 large bunch kale
Spaghetti with Tomato Basil Sauce
25 ripe plum tomatoes
1/4 cup plus 2 tablespoons extra-virgin olive oil
2 pinches crushed red pepper
1 large sprig leaf basil plus 8 fresh basil leaves
6 large cloves garlic
2 tablespoons unsalted butter
1/2 cup grated Parmesan plus more for serving
1 pound spaghetti
Pork Chops with Peach and Pecan Salsa
4 boneless pork loin chops (~1-inch thick)
2 medium peaches
2/3 cup chopped pecans
2 tablespoons red onion
2 tablespoons fresh basil
1 teaspoon jalapeno pepper
2 teaspoons lime juice
Chicken Salad in Lettuce Wraps
1 lb uncooked chicken (or 2 1/2 cups cooked, cubed chicken)
1 medium apple
3 celery stalks
1/2 cup red onion
1/2 cup walnuts
1/2 cup Greek yogurt
2 teaspoons Dijon mustard
2 tablespoons mayonnaise
1 small head butter lettuce
1 to 2 tablespoons fresh tarragon or dill (optional)

4 ounces bittersweet chocolate
3/4 cup heavy whipping cream
2 tablespoons sugar
1 tablespoon salted butter
