With Thanksgiving just days away, this isn’t exactly a typical week. You may find the desire to rely on take-out a little more and cook in a little less. Aush Afghan Noodle Soup

This brothy soup with greens, noodles, ground lamb, and a spoonful of Greek yogurt is one of the earlier recipes on the site, yet remains a personal favorite. It’s a good one to make on the weekend to eat over the coming days. And it works well if you have company descending, since it can easily be doubled and is a complete one-pot meal. 


Grilled Cheese Bar

You gather and set out all the ingredients, everyone else assembles their own just they way they like it. Another good one if you’re serving a crowd, since it’s sort of fun to set up a DIY Grilled Cheese bar.  Just add a big plate of cut up veggies (you might like this Healthier Ranch Dip) or a generous salad and dinner is done.   


Miso Ginger Salmon

Not a lot of ingredients, super flavorful, and so very good for you. Serve with brown basmati or jasmine rice and a simple veggie side. I’m partial to bok choy for this salmon (I sometimes do a version of this recipe, leaving out the tofu and pork, since you’ll be serving it as a side). 


How to make turkey broth

Don’t toss that turkey carcass after Thanksgiving. You can transform it into a golden turkey broth with very little effort. Just strip the meat from the bones, get it into a pot, add a few veggies, and let it bubble away. The instructions also includes a “how to” for the slow cooker in the recipe headnote 

Slow cooker french toast

This is a good way to feed a crowd at breakfast. Get it going early in the morning and it will be ready by the time everyone rouses. I like to serve it with Greek yogurt, maple syrup, and seasonal fruits.
