HANOI CHICKEN BANH MI
If you’ve never made your own Vietnamese-style sandwiches, you are in for a treat. Truth: this recipe is a little more involved than many on my site, but the results are worth the effort. You can make the pickle and marinate the chicken a day ahead, making lighter work of the sandwiches come dinner time.
THREE-INGREDIENT BLACK BEAN SOUP
I’m making up for the extra work with the banh mi by including this black bean soup, which is about as quick as it comes as far as getting dinner on the table. I like to set up a little toppings bar and include favorite fixings, such as salsa, sour cream, avocado, crumbled bacon, and fresh cilantro. Simple cheese quesadillas or these sweet potato “fries” make a suitable side.
SAUCY SLOW COOKER TURKEY MEATBALLS
My mom cooked this for a family dinner last week and even my brother, the professional chef, approved. Considering how easy these meatballs are to make, I’d say that’s a success. Serve them straight up in shallow bowls with crusty bread on the side or spoon over roasted vegetables such as broccoli or cauliflower. Parmesan on the side is a must.
DIY TRAIL MIX

Take a trip through the bulk bins as your local market and choose your favorite nuts, dried fruits, seeds, cereals, and yes, chocolate if you like. Then bring your haul home and make up your own trail mix just the way you like it.
CREAMY BANANA DATE SHAKE
This shake is a study in simplicity. It has just four ingredients, all of which you may already have in your pantry and fridge. Best of all, it tastes like a creamy treat, even though it doesn’t have a lick of ice cream or a spoonful of sugar.

Hanoi Chicken Banh Mi
1½ pound boneless skinless chicken thighs
1 tablespoon fish sauce
1 tablespoon fresh lime juice
1 large carrot
1 pound daikons, each no larger than 2 inches in diameter,
2/3 cup sugar
1 1/4 cup distilled white vinegar
2 French baguettes
2-3 tablespoons mayonnaise
1 English cucumber
1 small jalapeno
1 bunch fresh cilantro
Three-Ingredient Black Bean Soup
Three 15-ounce cans black beans
One 12-ounce container pico de gallo salsa (about 1 1/4 cup)
1/4 cup sour cream, plus any other favorite garnishes, such as shredded Jack or Cheddar cheese, fresh cilantro, lime wedges, and salsa
Slow Cooker Turkey Meatballs
1 pound ground turkey
1 link uncooked spicy Italian turkey sausage, about 1/4 to 1/3 pound
1/3 cup Italian seasoned breadcrumbs (preferably whole grain)
1/4 cup finely grated Parmesan cheese
1 egg
¼ cup chopped fresh parsley
2 tablespoons chopped fresh basil
One 28-ounce can crushed or diced tomatoes
One 14.5-ounce can crushed or diced tomatoes
2 large garlic cloves
Big pinch crushed red pepper flakes
DIY Trail Mix
2/3 cup cereal such as Cheerios, Wheat Chex, or Barbara’s Puffins
2/3 cup pretzels
2/3 cup your favorite nuts (almonds, cashews, peanuts, walnuts, etc)
1/3 cup seeds such as pepitas or sunflower
2/3 cup dried fruit such as cranberries, cherries, or raisins
1/3 cup dark chocolate chips (optional)
Banana Date Shake
1 cup milk (cow’s milk or plant milk)
1 banana
2 Medjool dates
6 walnut halves
