I’m not gonna lie, I’m gripped with a giant dose of cooking burnout right now. Anyone else? I am still enjoying holiday baking, but when it comes to dinner, I haven’t been super motivated. So, this week’s menu is a little on the selfish side. I chose a line up of personal favorites, hoping the menu might kick me back into my groove. Maybe it’ll do the same for you.

It’s always good to have a comforting pot of soup on the stove this time of year. This is one of my favorite recipes on the site. It also happens to be both vegan and gluten-free, so it’s suitable for folks with dietary restrictions, too.

Sweet Potato Latkes

These latkes are delicious any time of year, but are especially timely given that Hanukkah is here. Made with squash and sweet potatoes, they’re a little different than the norm. I like to serve them with crème fraîche and a colorful salad, such as this Baby Kale one.

Crunchy Asian-Style Salad with Chicken (or Tofu) Skewers

Crunchy Asian Salad with Chicken or Tofu

I know cold weather cooking tends to lean on hearty soups and starchy sides, but I like to mix in dishes that are on the lighter side. This bright, flavorful salad does it for me every time. Top it with broiled or grilled skewers of either chicken or tofu. Leftovers make an excellent lunch.

Pasta with Creamy Beet Sauce, Walnuts, and Parmesan

This shockingly pink pasta is thanks to a combination of tender beets and ricotta blended into a creamy sauce. You honestly don’t have to be madly in love with beets to love this pasta. The method is simple and the results, delicious. Tip: get it on the table as soon and you toss the sauce with the pasta and dig in.

Loaded Chicken Quesadillas with Avocado Salsa

These quesadillas are ideal for a quick dinner using leftover chicken or repurposing a rotisserie one from the store. Pair quesadilla wedges with a plate of crunchy veggies and black beans on the side.

Cranberry Streusel Muffins

I’ve made a few batches of these cranberry muffins this month and plan to get in another round before the year is out. We are crazy about them in our house and have found they freeze like a dream.

Stove Top Popcorn with Sriracha and Lime

We are in full holiday mode over here and are working our way through our movie favorites. Popcorn is essential and I love this stove-top method. Whether you make it with the sriracha/lime combo or a butter/salt classic, you can’t go wrong.

Oh Katie, I just made your cranberry cardamon loaf w/tangerine glaze from last week (can also be found under Christmas recipes) – it is amazing! That interplay between the tart cranberries & the sweet glaze is extraordinary. I’m afraid this loaf is staying home & won’t last long but I promise to make more as gifts 😘.
