Turkey Vegetable Pinwheel Wraps - Mom's Kitchen Handbook

Mediterranean Turkey Pinwheels

A colorful, delicious, and nutritious lunch that you can roll up in a jiffy.

Ingredients

  • 1 whole-grain lavash or tortilla
  • 3 tablespoons hummus
  • 6 pitted olives (whatever is your favorite)
  • 1/2 cup grated carrots
  • 2 thin slices turkey

Instructions

  1. Lay the lavash on your work surface. Use a butter knife to spread the hummus so it covers the lavash.

  2. Scatter the carrots over the hummus
  3. Lay the turkey slices over the carrots.
  4. Lay the olives in a row along the shorter edge of one end of the lavash.

  5. Roll up the flatbread starting with the end where the olives are.
  6. Use a serrated edge knife to cut it crosswise into 4 pinwheels (younger kids should have a parent help with this).
