Mediterranean Turkey Pinwheels
A colorful, delicious, and nutritious lunch that you can roll up in a jiffy.
serving (2 for the littlest ones)
Whole-Grain Flatout Flatbread
(or whole-wheat tortilla)
(whatever is your favorite)
thin slices turkey
Lay the flatbread on your work surface. Use a butter knife to spread the hummus so it covers the flatbread.
Scatter the carrots over the hummus
Lay the turkey slices over the carrots.
Lay the olives in a row along the shorter edge of one end of the flatbread.
Roll up the flatbread starting with the end where the olives are.
Use a serrated edge knife to cut it crosswise into 4 pinwheels (younger kids should have a parent help with this).
