Ingredients

  • 4 boneless pork loin chops that are about 1-inch thick
  • 3/4 teaspoon plus ⅛ teaspoon kosher salt, divided
  • Freshly ground black pepper
  • 2 medium peaches, cut into ¼ inch dice
  • 2/3 cup chopped pecans
  • 2 tablespoons diced red onion
  • 2 tablespoons chopped fresh basil
  • 1 teaspoon minced jalapeno pepper, more if you want it spicier
  • 2 teaspoons lime juice

Instructions

  1. Season the pork chops with the 3/4 teaspoon salt and a very light shower of black pepper.
  2. Get your grill or grill pan going over a medium-high flame/heat. Lay down the pork chops and cook until nicely browned, about 5 minutes. Flip the chops and continue to cook until the center registers 135 degrees F, another 5 or 6 minutes. Transfer to a plate and let rest for at least 5 minutes (the interior temperature will continue to rise).
  3. While the chops cook, assemble the salsa in a small bowl by gently stirring together the peaches, pecans, onion, basil, jalapeno, lime juice, and remaining ⅛ teaspoon salt.
  4. To serve, spoon a generous amount of salsa on top of each chop, with remaining salsa on the side.
