3-Ingredient “Everything” Baked Chicken

It doesn't get much simpler than this when it comes to cooking dinner. The recipe calls for just three ingredients and results in a flavorful, tender chicken dish that is immensely versatile. Make a double batch and stash the leftovers to pack for lunch the next day.

Ingredients

  • 2 boneless skinless chicken breasts (about 1 ½ lbs)
  • 1 lemon halved
  • 3 tablespoons Everything bagel spice blend

Instructions

  1. Preheat oven to 350 degrees F. Lay a piece of parchment or a silicone baking mat on a baking sheet.
  2. Squeeze the lemon halves over both sides of the chicken breasts. Set on the baking sheet and scatter the Everything spice mix over both sides of the chicken to evenly coat.
  3. Bake until the chicken is done, about 30 minutes. The time will vary depending on the thickness of the chicken. To test for doneness, insert an instant-read thermometer into the thickest part of the chicken. When it reads 155 degrees F, it’s done. Let it rest for at least 5 minutes.
