Ingredients
1poundsmall red potatoes(about 12 potatoes)
Olive oil
1/4cupLa Terra Fina Parmesan Kale Greek Yogurt Dip & Spread(or other kale or spinach dip)
2tablespoonsfinely grated Parmesan cheese
1tablespoonminced chives(optional)
Instructions
Put the potatoes in a medium pot and cover with cold water by 1 inch. Bring to a boil. Once the water boils, cook until the potatoes are tender enough that you can easily slide a paring knife into the center, about 12 to 15 minutes (time varies depending on size of spuds).
Drain. Preheat the broiler.
When potatoes are cool enough to handle, drizzle a teaspoon or 2 of olive oil over and coat them with your hands. Cut them in half and cut a sliver of potato off the bottom of each half so they sit upright without wobbling.
Spoon 1 teaspoon of La Terra Fina Dip onto each potato. Sprinkle about 1/4 teaspoon of Parmesan over the top .
Transfer potatoes to a baking sheet and broil until golden brown. Sprinkle a tiny pinch of chives on top and serve.
