Peanut Butter Granola Apple Stacks

I’m allergic to the month of May.  It’s not a “breaking out into hives” sort of reaction, more “I just can’t catch my breath” response. It’s undoubtedly brought on by the confluence of too many end-of-school year calendar items bumping up against the transition into summer. I’ve written about this before.


Being unglued doesn’t mean I get to shirk my duties. There are people to be cared for. To be ferried. And always, always, always, to be fed.

Do you think they’d miss just one little meal? I find myself wondering.

But then a small burst of energy hits me. An awareness that May doesn’t last forever. In time, I get enough of my groove back to make the next meal. To fill out that camp form. To drive someone somewhere. To mother.

And to make a snack. Not just any snack, but one all three of my kids are crazy about. These Peanut Butter Granola Apple Stacks. The apple/nut butter combo hits all the right notes for a tasty snack. Even better? They take just minutes to make and are so very good for you (peanuts are a nutrition win, if you ask me).

How to Make Peanut Butter Granola Apple Stacks

Start by coring an apple.

If you don’t have an apple corer you can work your way down the center using a melon baller.

Cut the apple into rounds

Think of it as though you are cutting apple donuts (minus the deep frying)

Assemble your apple stacks

Spread peanut butter over each apple slice and then scatter on favorite toppings. Feel free to use any nut or seed butter if peanut butter isn’t your thing.

Peanut Butter Granola Apple Stacks

Crisp apple slices, creamy peanut butter, crunchy toppings. What's not to love in this quick and nourishing snack? With its combo of fiber, healthy fats and protein, it's satisfying enough to tide you over until mealtime.

Ingredients

  • Apple
  • Peanut butter (or any nut, seed, or soy butter)
  • Granola or salted peanuts (or other favorite nuts, coconut, or seeds)
  • Dried cranberries (or raisins, dried cherries, or dark chocolate chips)

Instructions

  1. Core the apple with an apple corer or melon baller. Lay the apple on its side and cut crosswise into 1/4-inch thick slices. Spread a thin layer of peanut butter over the slices. Scatter granola or peanuts on top along with a few dried cranberries. Enjoy!
