Avocado on the Half Shell

So often the best things in life are the simplest: a game of cards with your kid, a cup of tea with a girlfriend, a walk on the beach, and a three-ingredient snack I’ve taken to calling “Avocado on the Half Shell”.

This has become a go-to snack that has been surprisingly popular with my kids. It’s nothing more than half of an avocado, really, but is “top-of-the-heap” good for you. Avocado is a source of healthy fats, fiber, and vitamin E that works well between meals because it digests slowly, so will keep you filled up for a good while. Dousing the avocado with lemon juice does double duty by adding flavor while minimizing the browning that happens when fruit is exposed to air. It packs up well to go, too. Just add a spoon. 

Avocado on the Half Shell

Ingredients

  • 1 small ripe avocado
  • 1/2 lemon
  • 2 pinches flaky salt (any old salt will work just fine, too)

Instructions

  1. Cut the avocado in half by running a sharp knife lengthwise around the circumference of the fruit. Pull the two halves apart. Spoon the avocado pit out of the fruit or wack it firmly with the blade of a chef's knife so the knife inserts in the pit and you can dislodge it from the avocado.
  2. Squeeze the juice from the lemon over the surface of the avocado halves, dousing them generously. Add a pinch of salt over each avocado half.
  3. Serve with a spoon.
