Honey Mint Green Iced Tea

Be careful. I’m watching you. Invite me for dinner and I’ll snoop over your shoulder to see how you cooked that delicate fish in parchment. Make lunch for me and I’ll squirrel away your method for that killer guacamole. And prepare a pitcher of refreshing iced tea for brunch and I’ll knock if off for sure.

This is exactly what happened with this honey mint green iced tea. It was served at an especially lovely brunch last summer and I’ve stowed it away until now, when the heat is upon us and iced tea is in order. It’s a terrific sort of thing to keep in a pitcher in the fridge, a better alternative to soda and other super sugary refreshers.

It’s just a touch sweet and is brightened with a whole mess of fresh mint, which works well with the green tea flavor. The high antioxidant content of green tea makes this it all the more worthwhile. According to complementary medicine guru Dr. Andrew Weil,  “Green tea is perhaps the most healthful beverage human beings can consume.”  Research studies have linked green tea with reducing “bad” cholesterol, cancer risk, and depression. That’s some tea.

Opt for decaf, and this becomes fair game for the kiddos.

Honey Mint Green Iced Tea

A refreshing summer drink, Honey Mint Green Iced Tea is good and good for your.

Ingredients

  • 7 cups water , divided
  • 2-4 tablespoons honey
  • 5 bags green tea
  • 6 sprigs fresh mint , plus more for garnish
  • Ice

Instructions

  1. Boil 2 cups of the water and pour into a large glass pitcher. Add the honey, tea bags, and fresh mint and stir. Steep for 10 minutes.
  2. Remove the tea bags and mint. Add 5 cups ice cold water. Serve over ice and garnish with more fresh mint.
