Cutting Board Safety

This is a trick I learned from the pros during my one foray into restaurant cooking while in grad school. To keep cutting boards from wiggling around (and risk a slip with the knife), dampen a dish towel, lay it on your work surface, and set your cutting board on top. Alternatively, you can cut pieces of foam or rubber (the kind used to line shelving available in hardware stores) to match the size of the cutting boards and store them along with your boards. This will stabilize the cutting board so that you don’t risk slips as you work your magic with the knife. It’s particularly useful once your kids hit the stage when they are learning to wield a knife and you want to keep their precious little hands safe and sound.
