Lunch Box Bagel Kabobs 4 Ways

Have we talked about the movie Mermaids? A coming of age film from the 90s, it stars Cher as an unconventional mother, with Winona Ryder playing the daughter who wants to be everything her mom is not. Among the quirks of Cher’s character is her unusual approach to cooking, whereby she cuts everything into bite-size pieces and spears it onto toothpicks festooned with colorful foil. On one occasion, her boyfriend arrives, pleased as punch to bring his beloved a supply of fresh bagels with all the fixings. Before he knows what’s happening, Cher has chopped, toothpicked, and stacked his precious delivery onto a party platter. While her boyfriend was less than delighted, I happen to like her style, because, let’s face it, who doesn’t like food on a stick?

Case in point is today’s recipe for Lunch Box Bagel Kabobs. It has two things every kid I know loves: bagels and skewered food. In between are ingredients that add up to a deconstructed sandwich in four different flavors that make a tasty lunch box main:

1. Ham & Cheese

2. Italian Caprese

3. Smoked Salmon & Cream Cheese

4. PB&J

The bagels I used for this came from my favorite everyday brand: Dave’s Killer Bread, purveyors of nutritious, organic sliced bread. Dave’s was probably the first whole-grain sandwich bread that got universal thumbs up from my kids. The bagels, new on supermarket shelves, are getting thumbs up around here, too, both from the kids, who”love them” and from me, since they stack up favorably from a nutrition standpoint :

I happen to like the taste, too, particularly when toasted and topped with a fried egg and heaps of sauteed spinach for breakfast.

 

So pick a favorite kabob option, get ahold of some Dave’s Killer Bagels along with a stack of skewers, and get your Cher on. Who knows, you may even break out into song                                                                       “….I got you, babe…”

Lunch Box Bagel Kabobs

What kid doesn't love food on a stick (or what adult, for that matter)? This one is essentially a deconstructed bagel sandwich. Choose among any of the four classic options, pull out a couple of wooden skewers, and put a little fun into meal time. To pack into a lunch box, wrap in parchment or wax paper and twist at the ends or tuck into a suitable container. If you have little ones, snap off the pointy ends of the sticks before wrapping.

Ingredients

Caprese Kabob

  • 1 Plain Awesome Dave's Killer Bagel
  • 6 cherry tomatoes
  • 6 small Mozzarella balls (bocconcini)
  • 6 basil leaves

Ham & Cheese Kabobs

  • 1 Epic Everything or Plain Awesome Bagel Dave's Killer Bagel, spread lightly with mustard
  • 6 cubes Cheddar or Swiss cheese
  • 3 slices Ham, cut into 6 pieces
  • 6 cornichons or pickle slices

Nut Butter & Jam Kabobs

  • 1 Cinnamon Raisin Remix Dave's Killer Bagel, spread with nut or seed butter and favorite jam
  • 6 raspberries

Cream Cheese & Lox Kabobs

  • 1 Epic Everything Dave's Killer Bagel, spread with cream cheese
  • 3 thin slices lox or smoked salmon, cut into 6 pieces
  • 6 slices English or Persian cucumber

Wooden Skewers

  • 2 wooden skewers for making kabobs

Instructions

  1. Choose any one of the 4 Bagel Kabobs to make. Set out all of the ingredients. 

  2. With the top and bottom of the bagel sandwiched together, cut the bagel into 6 wedges. 

  3. Thread the bagel pieces onto the skewers, alternating with the other ingredients. Each skewer will have 3 of each ingredient. 

  4. Enjoy!
