Lunch Box Waffle Sundae
Kill two birds with one stone with this simple school lunch recipe. First, it’s a way to use up leftover waffles (freezer waffles work just fine for this, too). And second, it’s an easy fix for the challenge of packing school lunch. Plus, who doesn’t love breakfast for lunch?
Simply crisp up a leftover waffle in the toaster and pack it in a wax paper bag or other container. Separately, pack plain yogurt, a favorite cereal or granola, fresh fruit, and enough maple syrup to make it just sweet enough. Kids can assemble the goodies at the lunch table. Don’t forget to include a fork!
Lunch Box Waffle Sundae Bar
- 1 toasted waffle (homemade or whole grain freezer waffle)
- 1/2 cup plain yogurt
- 1/2 cup fresh berries or sliced fresh fruit
- 1/2 banana
- 1 tablespoon maple syrup
For a packed lunch, arrange the yogurt, fruit, and syrup in containers. Wrap the waffle in a wax paper bag or parchment paper. Pack into lunch box with a fork. Kids can arrange ingredients as they like on the waffle and eat with a fork, or use the waffle to dip into the yogurt and fruit.
