10 Healthy Snack Ideas

For some of us, figuring out what to feed kids after school day-in day-out can be as challenging as packing lunches. And snacks do matter. The trick is to nourish kids enough so they’ll last through the afternoon, but not so heartily that they want to take a pass at dinnertime.

I had the opportunity to dream up a slew small bites when the folks at Real Simple magazine asked me to develop 10 healthy snack ideas for their annual Family issue. It was a plum assignment. The catch? Each recipe had to be less than 30 words on the page, which by nature means they’re all supremely easy to make (exactly as it should be for after school eats!).

1. Coconut Cashew Butter Bon Bons

A tasty spin on the classic “energy ball”.

2. Eda-mommy Dip

Edamame and avocado make this a nutrition powerhouse.

3. Strawberries and Cream Tea Sandwich

Excellent for breakfast, too.

4. Parmesan Pita Crisps

A crunchy, healthier alternative to potato chips.

5. Six-Layer Parfait-in-a-Jar

Add a lid and take it to go.


6. Cheddar Apple Tartine

An easy, open-faced toastie.

7. Easy Cheesy Bean Dip

A kid-favorite in our house.

8. OJ Shake

Made with three whole tangerines.

9. Apple Snack Cake

My personal fave and ideal for class parties, too.

10. Creamy Yogurt Dip

Just four little ingredients.

My boys love apples and peanut butter, homemade larabars, fruit, string cheese. (I know, only one I have to actually “make” but sometimes the easiest are the fruit! 🙂 Congrats on the spread!

Just made the applecake (added walnuts)…fantastic! Can’t wait to give it to the girls. I really hope you do another cookbook…breakfast or snacks would help me out!!!
