Striped Juice Bar Ice Pops

These refreshing and colorful striped ice pops are made by layering watermelon juice with carrot/apple juice. The recipe relies largely on fruit and veggie juices for sweetness, with just a few added teaspoons of agave. They require a bit of effort, but the you’ll end up with a half dozen tasty showstoppers perfect for a summer party treat.

Striped Juice Bar Ice Pops
A colorful summer treat that is a healthy mix of fruit and vegetable juice. Layer each juice into stripes for an impressive and tasty pop.
Prep Time 30 minutes
Servings 6 ice pops
Ingredients
Watermelon-Beet Juice
- 1 1/2- pound piece of watermelon
- 2 tablespoons beet juice
- 2 tablespoons freshly squeezed lime juice
- 2 teaspoons agave sweetener
Carrot-Apple Juice
- 1 cup carrot juice
- 1/2 cup apple juice
- 2 tablespoons freshly squeezed lime juice
- 2 teaspoons agave sweetener
Instructions

To make the watermelon juice, cut the watermelon flesh from the rind. Cut into cubes, removing any seeds. Place in a blender and process until liquefied. Pour through a fine-mesh strainer into a small bowl, pressing the pulp with a flexible spatula to extract as much juice as possible. Discard the solids You should have about 1 cup watermelon juice. Stir in the beet juice, lime juice, and agave sweetener.

To make the carrot-apple juice, in another small bowl, stir together the carrot juice, apple juice, lime juice, and agave sweetener.

Using a small measuring cup with a pour spout, fill each mold about one-fourth full with the watermelon juice mixture. Insert sticks and freeze until set, about 30 minutes. Fill each mold another fourth of the way full with the carrot juice mixture, pouring it around the sticks. Return to the freezer and freeze until set, 30 to 45 minutes. Repeat once more with each juice mixture to make 4 layers total. Freeze until firm, at least 6 hours or up to overnight.

To unmold the pops, run hot water over the outsides of the molds for a few seconds, then gently pull the sticks.

Frosty blueberry Popsicles
(The Martha Stewart Show, May 2010)
2 cups Ocean Spray blueberry juice
1 1/4 cups blueberries (about 120 blueberries; 12 per mold)
1/2 cup strained Greek yogurt
Directions
Fill a 10-pop freezer-pop maker halfway with 1 1/4 cups blueberry juice (about 2 1/2 tablespoons per mold); add 6 blueberries to each mold. Place tops on molds and insert sticks; freeze until completely solid, about 4 hours.
In a medium bowl, whisk together remaining 3/4 cup blueberry juice and yogurt until smooth.
Remove pops from freezer and carefully remove tops. Fill molds evenly with blueberry-yogurt mixture, leaving about a 3/4-inch space from top. Add 6 more blueberries to each mold; cover with tops. Freeze until completely frozen, about 4 hours.

We love fresh strawberry sorbet!
2 qt – Fresh Strawberries – hulled
1/2 c – granulated sugar
1/2 c – water
2 Tbsp fresh squeezed lime juice
After putting in all in the food processor to puree it you can make it seedless if you prefer by straining the mix. We left seeds in and it was perfect. Freeze for 4 hours and enjoy!!

I literally just got the Tovolo molds from Amazon on Monday. I have not used them yet. I like to use my blender to blend strawberries, watermelon and oranges and then freeze them. Yum!

My boys LOVE to be creative when we make sweet treats! Add some plain greek yogurt, a bit of honey and any fruit we may have on hand. A new one we tried this week was cherry. Frozen (unsweetened) cherries, yogurt and a bit of almond extract. YUM!

My understanding is you can make pudding pops simply by filling pop molds with pudding and freezing them. Can’t vouch for it since I haven’t done it, but worth a go. Here is a recipe from Smitten Kitchen for chocolate fudge pops http://smittenkitchen.com/2011/06/fudge-popsicles/. I’d probably use low-fat milk instead of whole milk. Good luck!

We love anything with watermelon. In AZ, we have these frozen fruit bars (paletas) and my favorite is sandia (watermelon). I haven’t tried to make them myself, but just talking about them makes my mouth water. ^_^

We are trying to add more whole foods into our diet and frozen pops are one of five items I vowe not to buy at the store anymore (along with cereal, bread,granola bars, and fruit snacks) ! I would love a homemade popscicle recipe book!
I just made watermelon-mango pops this evening with my kids and they can’t wait to eat them! They check the freezer WAY to often to see if they have frozen completley.

Thanks Katie, we just got on the popcicle kick as my LO had her tonsils out. We picked up the Norpro Silicone Ice Pop Maker Set and love it. They are brightly colored and a fun cone shape- our trick is to take the pop out and flip it upside down and then my toddler doesn’t have an Oops-Oh moment squeezing it out. All the juice fall to the bottom for drinking later too. **We put fresh fruit in the blender and add coconut water- so much better for you then ice cream.

while it is not a pop, my favorite icy treat in the summer is buttermilk gelato – you can add any fresh summer fruit coulis as a topping and it is tangy and delicious. i would definitely try a pop recipe that combines greek yogurt and fruit but might spice it up with some fresh herbs from the garden…hello basil and lemon balm!!
