It’s a big weekend for big eats. The Superbowl! I’ll be eating more than watching and have included a few items that are suitable for game day: sheet pan pizza and turkey taco salad. You can also find a whole bunch of other Superbowl-worthy (and healthyish) eats by heading here. And for those of you with no interest at all in football, the banana bread in the meal plan is an excellent way to spend time on a Sunday with delicious results. Enjoy.

Easy, No-Kneed Sheet Pan Pizza

Cozy up with this big, crispy sheet pan pizza. Unless you have a packed house, you’ll be lucky and have leftovers. It’s great the next day and freezes well. Just pop frozen pizza in the oven or toaster oven to reheat.

Udon Noodle Soup with Soft Egg and Collards

This tasty soup is full of immune boosting goodness to keep cold season at bay. It’s flavored with garlic, ginger, a little chili, leafy greens, and chicken broth. It’s a healing brew, a one-pot meal, and delicious, too.

Turkey Taco Salad with Cumin Lime Dressing

A satisfying, crunchy chopped salad tossed with old-school turkey taco meat. Top with crumbled tortilla chips and you’ve got a main dish meal on your hands. Finish with a plate of chilled citrus for dessert.

Hanoi Chicken Banh Mi

Make sandwich night a little more interesting with flavor-packed banh mi. It’s a Vietnamese-style sandwich made with marinated chicken, pickled vegetables on a crusty baguette. If you can, make the vegetables ahead of time, so it’s easier to pull everything together come dinnertime.

Grilled Skirt Steak with Salsa Verde

Skirt steak works well for weeknight meals, since it’s a thin cut that cooks quickly. If grilling is off limits this time of year, you can do this in a cast iron skillet or under a broiler. The salsa verde is Italian-style, with herbs, capers, and shallots. Grill or roast some little potatoes or other vegetables and toss together a salad with this vinaigrette.

Shaved Brussels Sprouts Salad with Lemon and Pecorino

This is a refreshing alternative to roasted Brussels Sprouts. There’s no cooking involved. You just run the Brussels through a food processor and toss with olive oil, lemon, and other goodies. The salad holds up for a couple of days after it’s made and dressed.
Tender Banana Bread with Walnuts or Chocolate Chips

Like a lot of folks, I’ve been baking muffins and quick breads on repeat since the pandemic hit. This is one of my favorites. Make it with chocolate chips or walnuts (or no adornment at all) to enjoy for breakfast, snack, or dessert.

1 ½ cups whole-wheat flour

1 ¼ teaspoons active dry yeast
½ teaspoon sugar

½ teaspoon dried oregano
8 ounces fresh mozzarella

1 packet taco seasoning mix
1 head romaine lettuce
¾ cup halved cherry tomatoes
1/3 English cucumber
5 radishes
½ large avocado
1 cup coarsely grated sharp cheddar or Monterey Jack cheese
2 tablespoons lime juice
1 tablespoon apple cider vinegar
¼ cup extra-virgin olive oil
½ teaspoon honey
½ teaspoon ground cumin
Black pepper
Handful tortilla chips

1 ½ pounds boneless skinless chicken thighs
¼ heaping teaspoon sugar
1 tablespoon fish sauce
1 tablespoon fresh lime juice
1 ½ tablespoon canola oil
1 large carrot
1 pound daikons, each no larger than 2 inches in diameter
1 teaspoon salt
1 ¼ teaspoon black pepper
2 teaspoons plus ½ cup sugar
1 ¼ cup distilled white vinegar
2 French baguettes
2-3 tablespoons mayonnaise
1 English cucumber
1 small jalapeño
1 bunch fresh cilantro

Id like to make and enjoy everything but especially love the Brussel Sprout salad and pizza~~~can I use GF flour for the pizza!!

I would probably find a recipe specifically developed using GF flour. Check out the website Bojon Gourmet. She’s a pro.
