I‘m sharing hints of the summer to come in this week’s menu. I’m personally looking forward to doing sandwich night with that Chicken and Muhammara recipe and roasting apricots for dessert (if you’ve never made it before, it’s a must). Enjoy!

Cooking pork low and slow in a crock pot with a serious hit of chipotle is an excellent starting point for weeknight tacos. From there it’s a matter of gathering your best taco fixings with a salad or street corn on the side.  

Spring Vegetable Frittata with Boursin Cheese

A delicious and nourishing frittata bursting with the brightness of seasonal vegetables, including tender spring onions, asparagus, snap peas, new potatoes, and fresh chives. It’s enriched with cottage cheese and topped crumbled Boursin cheese. Great for lunch or brunch or a light supper. On the side try a simple salad, such as butter lettuce and shaved radishes with this vinaigrette.

Here’s a good one for meatless Monday. The tofu is breaded and baked until crispy and then layered with sauce and cheese. Add steamed or roasted broccoli and dinner is done. Leftovers are tasty a day or two later.

A satisfying, crunchy chopped salad tossed with old-school turkey taco meat. Top with crumbled tortilla chips and you’ve got a main dish meal on your hands. Finish with a plate of fresh, sliced pineapple.

This recipe relies on a big shortcut: pick up a rotisserie chicken at the store. Muhammara is easy to make by just blending a handful of ingredients in a food processor. It’s a filling sandwich, but you can embellish your table with a simple salad, summer fruit, or cut up raw veggies.

Herb Crème Fraîche with Grilled Vegetables

Gather up your favorite grilling vegetables, get them good and tender on the barbecue, and whip up a side of herb crème fraîche to go with. Makes a great side dish and excellent for a veggie sandwich.

Brown Sugar Roasted Apricots with Crème Fraîche

This is a dessert that you can throw together in a snap. After your apricots bubble in the oven, just add a spoonful of honey-sweetened crème fraîche (or serve with Yogurt Whipped Cream). Expect to want seconds.
